Chicken of the woods is a delicious chicken flavoured mushroom that is very easy to start with as a beginner forager. They can be recognised by their yellow and orange coloring and wave-like form. They also only grow on tree trunks.
Chicken of the woods can be found in autumn. You typically want to keep watch on trees that start to show deterioration. A place where I found them in great numbers are pollard willows. Since they often show deterioration from pruning. For harvesting you will need the young supple pieces. Hard pieces can still be eaten but are a bit bitter. It can be used in recipe's just like chicken.
Chicken of the woods salad

Cut the lamb's lettuce and clean the chicken of the woods with a mushroom brush. Chop into smaller pieces. Roast the pine nuts in a pan on low heat and remove when golden. Add oil in the same pan and add the chicken of the woods. Bake on medium heat until it looks pink with a gold crust. Remove the rosemary from the branch and chop finely.
Add everything too a bowl with olive oil, salt and pepper to taste. Blend together and enjoy!
Prior to the mid-20th century, dandelions and clover were considered signs of a healthy lawn. In fact, people frequently pulled up grass to make room for them. The narrative shifted due to targeted industry marketing.
Dandelions were labeled as "pesky," "ugly," "useless," and "invaders". But we know better! Dandelions are a superfood. Everything can be eaten from root to flower.
So let's start by making a patty from the flower. Make sure you pick them from a place where no dogs could have urinated and where there are plenty left for the bees.
Dandelion Patties

Start by cleaning the dandelion flowers with a little bit of salt and water in a bowl. Let that sit for about half an hour for all the bugs to get out.
Sieve the dandelions. Add salt and flour too a bowl until it's enough to fully cover the dandelion flowers. Add the dandelion flowers and stirr them well through the mixture.
Add the egg and mix well. Make hamburger sized patties from the mixture. Add butter or olive oil too the pan and bake the patties until golden brown. Add too your bun or bread. Enjoy!
During spring large bundles of white flowers can be found on a bush. The elderflowers. The flowers are edible raw and the berries, that come after the flowering, are edible after cooking.
Both are used in a wide range of recipe's. The berries can be made into a vinegar or drink. The flowers can be used as decoration, made into a champagne and a syrup.
Fun fact: In old tales the elderberry was thought to ward off evil while others told of evil witches lurking under the berries.
Elderflower syrup

Carefully shake the clusters to remove any bugs. Do not clean them using water. Remove the flowers from the stems. Add the flowers too a large bowl and add water until all flowers are under. Cover with a cloth and set aside for 24 hours.
Remove the flowers by pouring the mixture through a sieve. Repeat the process with a cheesecloth or teatowel.
Measure the remaining elderflower water and add 1 kilo sugar per liter of water. Add lemon juice and lemon pieces. Bring to a boil.
Simmer until all the sugarcrystals have dissolved. Remove the lemon and let the syrup cool down. Add too your bottle and enjoy!
Not really a recipe but I could not, not share it! Goosegrass or sticky willy is sooooo good for you! It's full of vitamine c, iridoids, which are known for their antioxidants, anti-inflammatory and neuro-protective effects.
It has been used to treats wounds, eczema, psoriasis, fevers, sleaplessness, cancer, bladder infection and much more. So instead of treating it as an annoying weed, let's use it!
The taste could be explained as a mix of cucumber and lettuce. You can also eat it, but better to bake or cook it first since the hairs aren't a very nice feeling.

It's as simple as can be. Pick a hanfull of goosegrass from a place where you can be sure no dog has been to take a wee.
Put it in you bottle of water and enjoy!
Nettle are known for their huge amount of vitamine c, and still used until this day in many culinary dishes as well as medicine. Their painful sting is actually very healthy for our body.
Though the underside of nettles do not sting, I find it the most easy to harvest nettles by using scissors. Make sure to keep some for the butterflies since they love them as well!
Now, let's forget about unhealthy potato chips from the supermarket and make our own healthy variant. Nettle chips!
Nettle chips

Hold the nettles with some scissors and use another pair to cut off the leaves from the stem. Place the leaves in a bowl with salt and water for about half an hour.
Sieve the nettles. Cover the leaves with olive oil and stir. Then add the salt and rest of your seasoning.
Place your chips on a baking tray and bake for about 20 minutes on 250ºF or 120ºC in the oven. If it's not crispy yet, try another 5 to 10 minutes. Enjoy!

I love berries! And blackberries can be found by the dozen these days due too the large amounts of nitrogen. I decided to make one with an oreo cookie base since I love the combination of chocolate and berries.
On the top I decorated with some more blackberries, some blueberries and flowers from herb-robert. The flowers don't really taste like much but just gives this little finishing touch. You can also use flowers from camomille, lavender or wild violets.
Blackberry Oreo pie

Add the blackberries in a bowl of water and salt to remove any bugs. In the meantime we can make the crust.
Crush the oreo's until it's a flour like powder. Melt the butter and mix both together into a kneadable dough. Press into a tart pan and place the crust in a refrigerator.
Clean the blackberries and blend most of them with a handful of blueberries. Keep some aside for decorating. Strain out the seeds using a fine sieve.
Add the agar-agar and blackberry mixture too a cooking pan and bring to a boil. Mix the whipped cream until stiff peaks start to form. Add condensed milk and sugar.
Add the blackberry mixture and slowly blend until smooth. Add the mixture in the tart pan and freeze again for about an hour. Add the decoration to your liking. Serve and enjoy!
